We at the Island Institute have been working for two years to help fishermen diversify their income streams through shellfish and seaweed aquaculture. We recognize, though, that a more robust supply chain is necessary for the edible seaweed industry to continue to grow and flourish in Maine. Processors and innovators often express interest in expanding to seaweed processing, but don’t know what products might be attractive to consumers. As a result, we commissioned a product development study that can help give entrepreneurs good ideas for viable, consumer tested, seaweed products.
